The
art of sausage-making developed by slow
stages. Virtually all peoples of ancient
Europe are known to have produced some
type, and by the middle ages sausage-making
had become an art practiced commercially
by entrepreneurs in many localities.
Some
of these sausage-makers became so adept
in the spicing and processing of distinctive
types of sausage that the fame of their
product spread throughout all of Europe.
One
such family, living in a tiny aldia (village),
made the best sausage in Portugal. In
fact, it was so delicious and different
from all other sausage, it was served
by Royal command to the crowned heads
of the palace of Quelez just outside of
Lisbon.
 Portuguese
sausage is famed for its originality,
but only this family knew the secret of
making the one just introduced to you
as "Neto", and it has been passed
down to their descendants from generation
to generation.
As
certain climatic condition are necessary
for the best results in manufacturing
it, they sought the perfect climate for
their sausages and decided upon the southern
portion of the San Francisco Bay area,
where they are produced. These succulent
tasty sausage products are under the name
of
"Neto"...
